This mornings breakfast! !! Who's says healthy eating can't be yummy! !! Chocolate protein brownie (homemade) with fresh berries! ! Who wants the recipe?
4 Ingredient Fudge Protein Brownies (Vegan, Gluten-free, Paleo) Prep time: 5 mins Cook time: 20 mins Total time: 25 mins Ingredients 2 cups mashed banana (about 6 medium, overripe bananas) 1 cup smooth peanut butter (I used Almond Butter) ½ cup Arbonne Chocolate protein powder ¼ cup cocoa powder Instructions Pre-heat oven to 350 degrees F. Line a small 8x8 baking dish or 8'' skillet with parchment paper or grease well. Set aside. In a large bowl, combine the mashed bananas, peanut butter, whisk until fully combined. Stir in protein powder and cocoa powder with a wooden spoon. Pour batter into a greased pan. Bake for 12-20 minutes or until cooked through. Cool for at least 10 minutes before cutting. Cover the leftovers and store in the fridge for up to 3 days. Enjoy cold or at room temp! Original recipe came from the link below I altered to use my Healthy Arbonne products!! I recipe I have come to LOVE!!!! It was on Pinterest. http://www.simplyrecipes.com/recipes/irish_beef_stew/ Oh my goodness!!! SO delish!! Simple and easy to make. It has such a rich flavor. I have modified it a little. I use rainbow carrots because lets face I am red headed and I have to break the rules HA! I used red potatoes instead of Russet because of my nutritionist. Other than that I followed the recipe and doubled #simplyrecipes Irish Beef Stew Please use beef chuck stew meat that is well marbled with fat. Lean stew meat will end up too dry. Save prep time by prepping the onions, carrots, and potatoes while the stock with beef is simmering in step 2.
Brown the beef: Sprinkle about a teaspoon of salt over the beef pieces. Heat the olive oil in a large (6 to 8 quart), thick-bottomed pot over medium-high heat. Pat dry the beef with paper towels and working in batches, add the beef (do not crowd the pan, or the meat will steam and not brown) and cook, without stirring, until well browned on one side, then use tongs to turn the pieces over and brown on another side. 2 Add garlic and sauté, then add stock, water, Guinness, wine, tomato paste, sugar, thyme Worcestershire, bay leaves, simmer: Add garlic to the pot with the beef and sauté 30 seconds or until fragrant. Add the beef stock, water, Guinness, red wine, tomato paste, sugar, thyme, Worcestershire sauce, and bay leaves. Stir to combine. Bring mixture to a simmer. Reduce heat to the lowest setting, then cover and cook at a bare simmer for 1 hour, stirring occasionally. 3 Sauté onions, carrots in separate pan: While the pot of meat and stock is simmering, melt the butter in another pot over medium heat. Add the onions and carrots. Sauté the onions and carrots until the onions are golden, about 15 minutes. Set aside until the beef stew in step 2 has simmered for one hour. 4 Add onions, carrots, potatoes to beef stew, simmer: Add the onions, carrots, and the potatoes to the beef stew. Add black pepper and two teaspoons of salt. Simmer uncovered until vegetables and beef are very tender, about 40 minutes. Discard the bay leaves. Tilt pan and spoon off any excess fat. Transfer stew to serving bowls. Add more salt and pepper to taste. Let's start with the day they leave. We met Matthew at MEPS. When he was getting off the bus and about to go in, there in the parking lot meadow, a deer. On the way home Todd and I saw a double rainbow. God knows what we need and when we need it.
I will be honest. I thought ok Matthew is leaving for Boot Camp I will work on my handcrafted jewelry line, Poetic Xchange, Do some festivals and home shows and stay busy. Time will fly by. Well sugar it didn't work that way. Funny how that happens. I think God needed me to have the feelings I have had to adjust and trust for what is ahead. It is hard to surrender and give control when all I have known as a mom is controlling his life. Hard truth, 13 weeks is a VERY long time. I have never gone that long without talking to my sweet boy! Hard truth, THIS IS THE NEW NORM! But, God has him right where he is meant to be. As the first weeks passed and our only form of communication was letters, I realized that my boy was changing. Matthew has never been great at communicating, lets face it he is a boy and a teenager. He has written letters and they have meant the world to us. He has started going to church on his own. We know we raise our children in a way that we pray they continue a journey but as parents we all fear they will stray or fall. I am just so proud of Matthew and how he is growing in his faith. In the Marines a huge part of their training includes Prayer and Devotion. Something many don't realize. This M.o.M does and appreciates it. Matthew started writing home talking about verses that mean the world to him. It gives a mom such peace to know that your child is secure with our heavenly father. As we get closer to Graduation I find myself getting emotional when I think of the moment we will see him. How much he has changed, or if I will squeeze him so hard he won't be able to breathe. All I know is his letter today professing his faith and asking to be baptized into the church after graduation will let this momma rest easy tonight. It is a fight for more veggies!! Todd wanted to add more veggies to his diet. That usually consist of a salad with less croutons HA! I have seen this recipe on Pinterest several times. So take your head of cauliflower and throw it in the Ninja or grade it on a block grader your choice. It will look crumbled. Put in a microwave safe bowl and heat for 7 minutes. Once heated put a paer towel over and press down to get excess moisture out. Add your eggs (slightly beaten), Parmesan cheese, 1/2 cup of your Mozzarella Cheese , garlic, crushed pepper, salt and pepper Preheat oven to 425 degrees Bake for 10 minutes or until it is golden brown. Once you remove from the oven build your pizza. Spread your pizza sauce of choice! We love the Classico (small jar) then I add red onion thinly sliced, rough chopped spinach, yellow and red cherry tomatoes halved, So that whole "I was prepared for Matthew to go away to boot camp" Lies, Lies I tell you!! I was great. I told him I would not have a melt down when dropping him off at the MEPS and saying our goodbyes. I was good, did I mention that. I have great M.o.M's support (Mom of Marine's) and had been told "The Call" would come letting me know he made it. They warned me that he would read a script and not be able to chat. They even told me people would be yelling. BUT HOLY BATMAN that call blindsided me when I heard it. Everyone told me just keep saying you love him over and over. But, honey this southern mess could not speak and that doesn't happen often. I was so upset that I didn't say I love you!
I know he knows but it was just such a shock that someone was SCREAMING at the top of their lungs at him and Matthew was trying his best to scream as told. Not a call I ever want to hear again. That drill instructor would get a switch if he was in arms length that day LOL. When I say blindsided with life. WOW, I never realized how much my life revolved around my boy! But, you know what it made me realize I LOVED every minute of it but did I leave Todd out...Thank God this man is AMAZING! We have spent time in the yard, played ping pong yes ping pong, cooked out and just spent time together. I realized this is the first time we have been by ourselves in forever!!!! I say that as he is snoring while I am here writing LOL. I would love to hear from other M.o.M's and your stories! Thanks for sharing the journey! Nita As a Marine mom this really touched my heart!
